The Saxon Tales

I have just finished reading all of  the Saxon Tales (“The Last Kingdom, The Pale Horseman, Lords Of The North, Sword Song, The Burning Land and hopefully many more still to come)  by Bernard Cornwell. They are Historical Fiction novels about 8th-9th century Wessex and King Alfred the Great and His battles against the Danes (Long before England).  And about the events in that time that are narrated by a fictional man named Uhtred Ragnarson (Uhtredson) from His point of view and so far I love them and I hope that many more are published in the future. I recommend that You should check them out and read them. Here are some Book Covers.

Homemade Blueberry Muffins

I made some delicious blueberry muffins this week. They were perfectly moist and slightly crunchy and they did not stick to the pan. They were also very easy to make here is a recipe if you want you may cut this recipe in half if you prefer to.

  • 10 oz sour cream
  • 11 oz bread flour
  • 11 oz pastry flour
  • 8 oz butter
  • 14 oz sugar
  • 6 oz eggs
  • 1 ¼ tsp baking soda
  • 1 ½ tsp baking powder

Method

Combine the butter and sugar and cream very well. Scrape the bowl down. Sift all dry ingredients. Reserve. Add beaten eggs to the butter and sugar. Mix well. Add sour cream, mix well and scrape the bowl. Add dry ingredients and mix to incorporate. Scrape the bowl down well. Dredge berries lightly with flour to prevent color from bleeding into batter. Spray pans well to prevent sticking. Bake at 350°F (175°C).
